Honey Pork BBQ Ribs
2 tablespoons light soy sauce 1tablespoon hoisin sauce 1/2 cup Yellow Box honey 1/2 teaspoon five spice powder 1 tablespoon brown sugar 1 small fresh red chilli, chopped 1/4 cup tomato sauce 1 tablespoon sherry 2 teaspoons grated fresh ginger 1 clove garlic, crushed Method
Honeyed Prawns
Ingredients 1kg large uncooked prawns shelled and deveined
Marinade 1 cup Yellow Box honey 1 cup bottled tomato sauce 1/2 cup olive oil 1 tablespoon mustard Tabasco sauce to taste Freshly ground black pepper to taste
Method Combine marinade ingredients in a bowl. Place prawns in marinade and leave for 15-20 minutes. Thread 2-3 prawns on each wooden skewer (soak skewers in water beforehand to prevent burning). Grill or barbecue 5-6 minutes each side, brushing continuously with remaining marinade.
Honey Almond Marylands
Ingredients
4 chicken Marylands 30g butter, melted 1/4 cup flaked almonds 1 tablespoon light soy sauce
Method Place Marylands in oiled baking dish, brush with combined butter, honey, almonds and soy sauce. Bake in moderately hot oven for about 35 minutes or until chicken is well browned and tender.
Honey Sweet Potatoes – A great side dish!
Ingredients 3 medium sweet potatoes, peeled 100g pecans 60g butter 1 teaspoon grated orange rind 1/4 cup Blue Gum Honey pinch cinnamon 2 tablespoons chopped chives
Method Chop potatoes into large cubes. Bring pan of water to boil, add potatoes and boil uncovered for 5-10 minutes or until potatoes are just tender, drain. Melt butter in pan; add pecans and cook stirring until pecans are lightly browned, remove from pan. Add orange rind, orange juice, honey, and cinnamon to remaining butter in pan. Bring to boil. Boil uncovered until liquid is reduced by half. Add potatoes, cook, stirring until heated through, stir in pecans and chives and serve with your favourite meats or roasts.
Honey Bran Muffins
Ingredients 1 cup River Red Gum honey 125 g Butter, melted and cooled 2 large granny smith apples, peeled and grated 2 large eggs, beaten lightly 1/4 cup sunflower oil 3 cups self-raising flour 1 tablespoon baking powder 1/2 teaspoon bicarbonate of soda 3 cups of bran 1 cup sultanas
Method In a large bowl, combine honey, melted butter, apples, eggs and oil. In another large bowl combine the sifted flower, baking powder and bicarbonate of soda with the bran and sultanas. Make a well in the centre of the flour mixture, add the honey mixture and stir until barely combined. Fill muffin tins and bake in a preheated oven @ 190 for 25-30 minutes or until lightly browned and cooked through. Eat soon after removing from oven, split and spread with butter.
